Happy Thursday and happy SEPTEMBER!!! I’m a day late with this one, but today I have one last Salmon recipe for you guys. I realize that Salmon was our August thing, but I had to share this recipe since it’s SUPER easy, pretty inexpensive, and very kid friendly … AND HEALTHY!! Check out these Salmon Bacon Burgers:
I actually got this recipe from my friend Kacey’s site, Ambia Wellness (go there and check out more delicious recipes and wellness tips, info, and resources). I love her recipes because they’re geared towards busy, budget conscious families. She also talks about WHY these meals are good for you and what benefits your body is getting from the nutrients in the food (because knowing all the good things that salmon (or kale) is doing for your body makes it taste even better …).
I’m actually going to send you over to her site for the full recipe and all the nutrition info, but wanted to give you the general idea.
I love that this recipe calls for CANNED Salmon. Such an easy and more cost effective way to get your dose of healthy Salmon! This time I used these cans from our local coop, but usually we use Costco brand Salmon that we buy in bulk (again … making it even more cost effective).
And who doesn’t love bacon?!? My boys are absolutely crazy about bacon, and adding it into these Salmon burgers makes them taste even better!!
Basically, you cook the bacon and chop it up …
Then add the bacon to the salmon, throw in a couple additional ingredients:
Form into patties and cook for a couple minutes. Simple, easy, and HEALTHY!
My boys also will eat Brussels Sprouts if I cook them with a little bacon, so I added a side of these and some roasted potatoes, and it was a great meal!
Matt and I like to top the burgers with a little Avocado Oil Mayo (see below), fresh tomatoes, and some sprouts. My little boys … they’re all about the ketchup!
A great idea for an easy weeknight meal … that is kid friendly and good for everyone!!
