Last Friday I introduced our new Wednesday series here on View From The Fridge (and, no … that wasn’t a typo … I was just two days late for my post last week). Each month, we’ll pick one healthy food and each Wednesday of that month, we’ll share a recipe idea using that ingredient.
This month, it’s the AVOCADO …
You can read all about the health benefits of the avocado in last week’s post, but in summary, it’s good for your brain, it’s heart healthy, good for your eyes, stabilizes your blood sugar, can ease arthritis symptoms, lowers cholesterol, can help you loose weight, and … can even help prevent and fight certain cancers.
Sounds good, right?!? Here’s this week’s recipe: Avocado Potato Salad
A fabulous twist on the classic summer side dish to up the nutrition factor (and it’s delicious, too)!
This is for serving a bigger group of people … around 8-10, so half the amounts below if serving a smaller crowd:
- 3 lbs of new potatoes
- 8 hard boiled eggs, peeled and chopped
- 2 large ripe, but firm avocados
- 2 stalks of celery, chopped
- 2 red peppers, chopped
- 2 red onions, diced
- 2 large dill pickles, chopped
- 2 tablespoons of yellow mustard
- 4 tablespoons of apple cider vinegar
- Fresh dill weed, chopped (~2 tablespoons)
- 1 cup of Avocado Mayo (you could just use regular mayo here, but this Avocado Mayo is absolutely awesome!).
STEP 1: Quarter and boil the potatoes for ~10-15 minutes or until tender.
STEP 2: Make the dressing by combining mayo, mustard, vinegar, and dill:
STEP 3: Mix dressing with celery, peppers, pickles, and onion until combined well.
STEP 4: Mix in potatoes, eggs, and avocados and gently combine until just covered.
STEP 5: Add a bit of salt and pepper to taste, transfer to a serving dish, and serve immediately (or cover and refrigerate until ready to serve)!
The avocados and avocado mayo add just a slight twist to this classic summer side dish!
